Ingredients
- 2 lbs brussels
- 2 tbs garlic olive oil
- 6 cloves garlic, smashed
- kosher salt
- cracked pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
Instructions
- Pre-heat oven to 425 degrees.
- Line a large baking sheet with parchment paper.
- Fill a large bowl with cold ice water.
- Bring a large pot of water to a boil.
- Add a pinch of kosher salt.
- Drop brussels into boiling water and cook until bright green and tender, about 10 minutes.
- Using a slotted spoon, carefully remove brussels and place immediatly into ice bath to stop the cooking process. Leave in ice water for a few minutes and then drain.
- Using a cutting board or hard surface, smash brussels. You can use a mason jar or a flat tenderizing mallet to smash into a patty.
- Place flat brussels on baking sheet.
- Drizzle olive oil and then added the crushed garlic
- Season with salt and pepper, sprinkle with cheeses.
- Bake until sprouts are crispy and the cheese is a golden brown, about 20 minutes.

The directions don’t say what to do with the garlic and olive oil. Do you just drizzle with olive oil before baking? What about the garlic?

Just an FYI- you list garlic and olive oil in the ingredients but don’t include them in the recipe directions. I realized this as I was making them and just drizzled the oil over the Brussels in the pan, crushed up the garlic and sprinkled it over the sprouts, then seasoned with salt, pepper and finished with the cheeses. Yum!
