Ingredients
- Ribs:
- 2 Racks Baby Back Ribs
- Italian Seasoning
- Marinara Sauce (We love Raos)
- Shredded Mozzarella Cheese
- Noodles:
- 2 Packs of Shirataki Noodles
- 1 Pack Enoki Mushrooms
- 1/3 Cup Grated Parmesan Cheese
- Salt and Pepper for tast
- Juice of Half a Lemon
- 8 Basil LeaveS
- 2 TBPS Olive Oil
- 3 Cloves of Garlic (minced)
Instructions
- Cover ribs with Italian seasoning
- Bake uncovered at 275 for 2 hours
- Wrap ribs in foil and cook for 2 more hours
- Unwrap foil and pull out bones
- Cover ribs with marinara sauce
- Top with shredded mozzarella cheese
- Sprinkle with Italian seasoning
- Bring over to 350
- Place ribs back in oven for 10 minutes
- Then turn oven to broil and watch carefully for 2-3 minutes (You want the cheese to bubble and golden up a bit
- For the noodles: rinse noodles under water and let them drain really well
- Once drained, place in medium skillet and stir around to dry
- Add olive oil, mushrooms, garlic, and rest of seasoning. Sprinkle with basil
- Cook on medium heat for 5-7 minutes, stirring occasionally
- Turn heat off and add parmesan cheese
- Toss and serve
